Egg White Veggie Scramble

This is a meal for breakfast, lunch, or dinner!  Quick, loaded with protein, fiber, and vitamins.  Any veggies will work here, spinach, onions, peppers, garlic, go crazy!  This pic has grape tomatoes and mushrooms.





Spray a non stick pan with a little olive oil Pam and place over medium high heat.  Add mushrooms and tomatoes and saute, stirring frequently, until mushrooms are brown and tomatoes blister and burst.  Season with salt and pepper.   Reduce heat to medium and add All Whites liquid egg whites (portion according to how many servings you are making, 3 T has 25 calories), stirring and scraping the egg whites to cook through and combine with the veggies.  Sprinkle with 1-2 teaspoons parmesan cheese and serve with hot sauce if desired.  Avocado on top would also be a great addition if you have the calories to spare!
