Bulgur Grain Greek Salad


Grain is very important to have in your diet the USDA’s dietary guidelines call for three 16 grams serving of whole grain foods every day. Bulgur Wheat provides nearly all three recommended servings and here’s a delicious way to enjoy it! We love this for lunch or dinner and just to keep in the fridge for quick bites on the go!

Shopping List

  • 2 C of Bulgur  (You can buy at Trader Joes and Whole Foods)
  • 2 C of Hot water
  • 1 large cucumber
  • Cherry Tomatoes
  • Crumbled Feta Cheese (cut out if you want to remain on a more strict diet)
  • 1 Lemon
  • 1 bunch of Italian Parsely
  • 1 package of Fresh mint leaves
  • Salt / Pepper

TWO Hour Prep

Place two C of Bulgur in a large bowl add two C of Hot water cover and let sit for two hours on the counter.

When Bulgur is ready, chop and seed cucumber, halve the cherry tomatoes – about a handful, finely chop the bunch of Italian parsley and finely chop a few leaves of fresh mint add these ingredients to your Bulgur and Fluff with Fork.  Add crumbled Feta Cheese if desired, fluff with fork.                                                                            Add 1/4C – 1/2C of fresh Lemon juice to taste – add Salt and Pepper to taste!

This is best served cold – So, store in your fridge until your ready!
